Poached Salmon Salad
This delicious riff on Salmon Rillette, blends fresh salmon with hot-smoked salmon to give the spread an extra-rich flavor with bright notes of lemon and fresh herbs. A perfect spread for crisp rye toast!
2 cups water
2 cups white wine
1 small shallot, minced
1 lb fresh Kvaroy Arctic salmon fillet (skin off and cleaned)
4 ounces smoked Kvaroy Arctic salmon
¼ cup mayonnaise
Juice of 1 lemon
About 2 tablespoons sliced fresh herbs (chives and/or tarragon recommended)
Kosher salt and freshly ground pepper, to taste
DIRECTIONS
In a medium sized pot, combine the water, wine and minced shallots and bring to a simmer over medium heat.
While waiting for the poaching liquid to simmer cut the salmon fillet into about 1-inch cubes, and set aside.
Chop the smoked salmon into small pieces; it doesn’t have to be perfect, just small enough that it mixes smoothly into the poached salmon when mixed together. Put the chopped smoked salmon into a medium sized mixing bowl and keep refrigerated.
The poaching liquid should now be at a simmer. Have a strained basket ready for straining salmon. Place the cubes of fresh salmon into the pot, using a spoon or spatula to stir to make sure they are not sticking together. Poach the salmon until the center of a piece is still a little rare, this should take 3-4 minutes. Strain immediately and place the salmon on a plate or tray lined with paper towels. Refrigerate until completely cool.
Add the cooled poached salmon to the bowl with the chopped smoked salmon. Add the mayonnaise, lemon juice, sliced herbs, season with a couple heavy pinches of salt and a small pinch of pepper. Gently fold the ingredients together until thoroughly combined and an almost-smooth texture; you want it nicely combined but not pasty.
Taste and adjust seasoning with additional salt and pepper to your liking; enjoy!
