Sunset Salmon Poke

This tasty riff on the classic Hawaiian Poke makes for a perfect bite to get any happy hour, party, or meal started! Kvarøy (pronounced kwa-ray) meets Poke (pronounced poh-kay) for a delicious blend of the salmon’s richness with a little spice, tang, sweetness, and heat — a whole lot of flavor along with a pop of freshness and seasonality from the raspberries and herbs.

Serves 8

  • 2 pounds of Kvarøy Arctic Salmon, 3/8 inch dice

  • 2 tablespoons honey

  • 2 tablespoons rice wine vinegar

  • 1/4 cup lime juice

  • 2 tablespoons sriracha

  • 1 tablespoon ginger, finely minced

  • 2 teaspoons, or to taste Citrus Spice Blend or salt and lemon zest

  • 2 tablespoons cilantro, minced

  • 1 pint raspberries

  • Optional: Lavosh, cut into strips, toasted

  • Garnish: microgreens or shisho leaves

DIRECTIONS

Place diced salmon in bowl over ice. Combine all other ingredients except raspberries. Combine salmon with ingredients and mix well.

Pull raspberries in half and place on top of poke mix.

To Serve: Gently fold raspberries into poke mix. Serve with Lavosh or Sesame Crackers and microgreens or shisho to garnish.
