Seared Lemon Garlic Salmon with Crispy Fennel Potatoes, Warm Manzanilla Olives, Roasted Shallots, and Sautéed Broccolini

Just whipped up this savory bowl with a luscious piece of sustainable salmon raised by Kvarøy Arctic that literally melted in my mouth. Love that it’s available at Whole Foods Market and has twice the amount of omega-3s which gives it an incredibly rich flavor. I cooked it with a quick homemade garlic-infused olive oil plus lemon for a little zing! 💫🍋 Finished everything off with fresh dill & parsley, cracked black pepper, hemp seeds and a sprinkle of flaky salt for good measure, always!

DIRECTIONS
Add your oil and garlic to a small pot, and gently warm over medium-low heat (about 5-10 min, until the oil becomes fragrant). Remove from heat and set aside (you will have extra and it’s great for salad dressings).

Next, pat the salmon dry, then brush a coat of the garlic olive oil across the top and sprinkle with salt. Sear over medium-high heat, skin-side up for about 3 minutes, then flip to cook for another 3-4 min.

Finish with black pepper and a nice juicy squeeze of lemon plus zest on top!
