Seared Salmon Fettuccini Alfredo

Pasta is a love language in its own right, add seared salmon, butter, heavy cream, parmesan and a touch of wine… it becomes a full-on romance!

This is another quick and easy recipe with big bold results, perfect for Valentine’s Day or that recipe that earns you a get out of jail free card any time of the year. Enjoy!

  • 1 pound fettuccini noodles, cooked

  • 1 tablespoon unsalted butter

  • 5 oz portion Kvaroy Arctic Salmon, large dice

  • 2 teaspoons garlic, freshly minced

  • 2 teaspoons tomato paste

  • 1/4 cup sauvignon blanc

  • 1 cup heavy cream

  • 1/2 cup parmesan, grated

  • 1/2 lemon, juiced

  • 2 tablespoon parsley, chopped

DIRECTIONS

Cook fettuccini noodles in boiling water to proper doneness. Heat a sauté pan on medium to high heat, season and sear the diced salmon. Keep the salmon rare. Remove from pan and add minced garlic. Sauté for 1 minute then add tomato paste, cook for 1 minute but do not get too much color.

Deglaze pan with white wine and whip in the heavy cream. Allow to reduce for 1 minute then add 1/2 of the parmesan cheese, add cooked noodles, squeeze in the lemon juice, and top with remaining cheese. Allow to cook together for 1 minute but be careful not to over cook or the sauce will separate. Transfer to presentation plate, top with salmon and garnish with fresh chopped parsley. Enjoy!
