Norwegian Lemony Baked Salmon

Serves 6 to 8
8 salmon filets
4 tablespoons (60 g) lightly salted butter, cut into small pieces
1 large lemon, thinly sliced
1 teaspoon dried parsley
1 teaspoon salt
½ teaspoon pepper
DIRECTIONS
Preheat the oven to 400°F (200°C).
Place the fillets in a baking dish and arrange the butter and lemon in between and on the sides of each fillet, sprinkling any leftover butter and lemon on top. Add the parsley, salt, and pepper, and bake for about 15 minutes or until the fish is opaque in the center. Serve with boiled potatoes, cucumber salad, and sour cream.
