Kelp Chip Crusted Salmon
This recipe riffs off of cornflake or saltine crusted chicken meals of days gone by. The crisp crust is made from Kelp chips ground in the food processor or crushed in a bag with a rolling pin. Serve with roasted vegetables and mashed potatoes!
Serves 6
4 skinless Kvaroy Arctic Salmon Portions
½ cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon cayenne pepper
Salt and pepper
2 large eggs
6 cups coarsely crushed kelp snack chips, such as 12 tides
3 tablespoons unsalted butter, melted
DIRECTIONS
Preheat oven to 375°F. Line a rimmed baking sheet with foil. Mix flour, thyme, cayenne pepper, salt and pepper. In a second shallow dish, whisk eggs to combine. Spread kelp chip crumbs on a second rimmed baking sheet.
Dip the salmon into seasoned flour, turning to coat, then dip in egg mixture. Remove the salmon, allow excess egg to drip off, then press both sides into crushed kelp chips. Transfer to baking sheet. Discard remaining flour, egg and kelp chips.
Drizzle the salmon with melted butter. Bake until coating is crisp and salmon is cooked through, about 15 minutes.
