Grilled Salmon Hot Dogs with Sriracha Mayo and sautéed pepper slaw

Serves 4

  • 2 tablespoons olive oil, plus more for brushing the grill

  • 3 tablespoons Unsalted Butter

  • 1 large yellow onion, peeled and thinly sliced

  • 1 large yellow bell pepper, seeded, deveined and thinly sliced

  • 1 large green bell pepper, seeded, deveined and thinly sliced

  • 1 large red bell pepper, seeded, deveined and thinly sliced

  • 1/2 teaspoon salt

For the Sriracha Mayo

  • 1/2 cup jarred mayonnaise

  • 2 tablespoons of sriracha chili sauce

  • Salt and pepper to taste

  • For the Salmon Dogs
    One four pack of Kvaroy Arctic hot dogs

  • 4 Pretzel hot dog buns

  • 1/2 teaspoon garlic powder

DIRECTIONS

STEP 1

Heat a medium saute pan over medium heat. Add 1 tablespoon olive oil and 1 tablespoon butter to your pan. Add the onions to the pan. Caramelize slowly, lowering the temperature in order not to over brown. Cook your onions until they are a beautiful brown color, about 15 minutes. Remove onions from your pan and set aside. In the same pan add in 1 tbs olive oil and 1 tbs butter. Place the bell peppers in the pan and cook the bell peppers for 10 min. Add back in the onions, season with salt and cook for another 5 minutes. Place the onions and peppers in a bowl and set aside.

STEP 2

Meanwhile, in a small bowl, combine mayonnaise and sriracha sauce. Stir together until combined. Set aside.

STEP 3

Heat grill or grilled pan and brush a light coat of olive oil onto the salmon hot dogs. Once the grill or grill pan is hot, place hot dogs on the grill. Cooking for 6 minutes or until brown. While your hot dogs are cooking, butter with the remaining 1 tbs of butter (softened or melted) combine with the garlic powder. Spread or brush the mixture onto the cut side of the buns. Place them on the grill cut side down. Seasoning your buns adds another level of amazing flavor to your hotdogs. Grill them for 30 seconds to 1 min until the inside of the buns are golden brown. Once your hotdogs are fully cooked, remove from the grill and set aside.

STEP 4

Assemble your salmon hot dogs. Take one of the pretzel buns and spread the sriracha mayo on one side of the bun, add the salmon hot dog and top with the grilled veggies, top with more sriracha mayo and serve immediately. Enjoy!
